Thoughts – We heard that fermenting in eggs was all the rage so we threw this Chardy into one and waited with bated breath.
Taste – What hatched from the egg was definitely wine, but not our style. So we did what I think anyone would do in our situation; we called in the French Oak and 6 months later we had something to write home to mom about. “Hey Mom, remember when Chardonnays were flavourful and had texture? No, neither do I, but we’ve made one that totally does.”
